A Girl’s Best Friend Cookie

These cookies are the real thing. The real deal. The big shebang. My husband, who is oddly opposed to most all baked goods, even loves them. I made these yesterday to make a great day even better but they do their magic especially when you need a little chocolate therapy. This cookie is the answer to PMS, gloomy days, irritability, crazy kids, nutty husbands, wacko workplace shenanigans and unfathomable situations. Okay, the last one might be a bit overboard but it sounded good thrown in there with the rest of the adjectives and nouns. But seriously. Make these and I would advise that you even make a double batch and freeze them for quick relief from any of the aforementioned life events. They will save you and they will save the people around you. We all know that feeling when we transform into the small, yet deadly, dinosaur in Jurassic Park. Perfect Protein Bar

My search for a homemade, amazingly delectable and oh so perfect protein bar is over! I have gone through many a recipe using all sorts of ingredients. They’re either too chewy, usually because of the banana most call for, they only last for a couple days before they’re bad, usually because of all the other fruit they call for, or they taste like a hippie created them from dirt, sticks and tree bark. These bars are none of those things and I am so excited to share them with you! Ingredients 1 Cup Pumpkin Seeds 1 Cup Walnut Halves 1/4 Cup Sunflower Seeds 1/4 Cup Brown Rice Protein Powder 1 Cup Rolled Oats (Optional) 1/2 Cup Unsweetened Shredded Coconut 1/2 Cup Coconut Oil 1/2 Cup Raw Honey 2 Free-Range Organic Eggs 1/3 Cup Natural Peanut Butter 1/3 Cup Cacao Nibs 2 Tsps. Ground Cinnamon Directions 1. Preheat your oven to 325 degrees then grease a 9×11 pan. Once greased, cover with parchment paper so that it hangs slightly over the sides. 2. Passion Paradise Smoothie

The smoothie I’m totally vibing on this month? It’s a Passion Paradise. Okay so I made that name up just now. It doesn’t incite passion in me but it’s silly, I like it and it makes me feel like I’m sipping a drink in the sun by the warm ocean when really I’m at my desk at work. Here it is! Ingredients 1 Cup of Milk of Your Choice ½ Cup Water 1 Ripe Banana ¼ Cup Shredded Unsweetened Coconut 1 Tbs. Natural Peanut Butter 1 Tbs. Protein Powder (Preferably something plain instead of vanilla or chocolate) ½ to 1 Cup Frozen Tropical Fruit (Fred Meyer has one with strawberries, mango and pineapple) Directions Put all ingredients in your NutriBullet or blender and let it spin! ENJOY! Notes: Add a cup of spinach if you’d like an extra boost of awesomeness. Chia seeds are also a nice addition. That is, unless you want to save your smoothie for later. Then your smoothie will become a bio hazard cross-breed of flan and fruitcake. Again, natural peanut butter makes ALL the difference. African Peanut Stew with Quinoa

I’ve made this dish a couple times, including Monday night, and it is one of our favorites! Not only is it so darn delicious but it’s different and nice to add to the usual rotation. Plus, my coworker said it smelled really good when I heated the leftovers up for lunch:) Sorry no picture for this one, you’ll just have to take my word for it. Ingredients 2 Cups Uncooked Quinoa or Rice 1-2 Tbs. Olive Oil or Coconut Oil 2 Carrots (Chopped) 2 Small Zucchinis or 1 Large (Chopped) 1-2 Bell Peppers (Chopped) 1/2 Red Onion (Chopped) 1 Garlic Clove (Minced) 2 1/4 Cups Vegetable Broth 3 Tbs. Tomato Paste 4 Tbs. Natural Peanut Butter 2 Tbs. Soy Sauce 1/2 Tbs. Powdered Ginger Directions 1. Soak the quinoa or rice for 10-15 minutes. 2. While soaking the quinoa or rice, cut up the veggies. Add oil to a large skillet over medium heat. 3. Sauté for a few minutes in-between each addition of vegetables, starting with the carrots, then the zucchini, bell pepper, onions and finally the garlic for about 30 seconds. 4. Asian Quinoa Bowl

This recipe makes me happy. When I’m craving something with some Asian flare, this is my go-to recipe because it’s quick, simple, healthy and delish. It is also yet another quinoa recipe…I should probably buy stock in this delightful little grain! Ingredients 2 Cups Uncooked Quinoa 2 Fried Eggs (Pre-Cooked and Chopped) 1 Tbs. Olive Oil 1 Zucchini (Chopped) 1 Head Broccoli (Chopped) 8 oz. Mushrooms (Coarsely Chopped) 1 Small Onion (Diced) ½ Cup Grated Carrots 1 Tbs. Grated Ginger 2 Cloves Garlic Minced 3-4 Tbs. Soy Sauce Directions 1. Start soaking the quinoa for 10-15 minutes to get the bitter coating off. 2. Fry the eggs, chop them up then set aside to add to the dish later. 3. Drain the water out of the quinoa, rinse with clean water and put it in a medium-sized sauce pan. Add 2 ¼ cups of water, bring to a boil, cover and turn down to low/medium. Set your timer for 10 minutes, check and then add another 1-5 minutes depending on how much liquid is left. 4. Heat the olive oil in a large skillet over medium high heat. 5.
